1 10-ounce package frozen chopped spinach, thawed and squeezed dry
4 tablespoons butter
1/2 cup finely chopped onion
1/4 cup all-purpose flour
2 cups milk, heated until steaming hot
Salt and freshly ground black pepper to taste
1/4 cup grated Parmesan cheese (optional)
- In a large saucepan over medium heat, melt the butter. Add the onion and cook until softened, about 5 minutes.
- Add the flour and stir until smooth. Slowly add the milk, whisking continually until the mixture comes to a boil.
